My first attempt at Bicol Express was made of success!
I loved it. But then, I love anything with gata (coconut milk). My husband loved it too.
Here’s my version of the hot Pinoy favorite:
- 1/2 kilo pork, cut into 1” cubes
- 1 cup serrano or jalapeno peppers thinly cut (i think sili espada is the perfect choice but it’s not available here in Colorado)
- 1 tbsp chili powder
- 3 cloves of garlic minced
- 1 onion, minced
- 1 1/2 cup coconut milk
- 1/2 cup shitake mushrooms thinly sliced
- Salt and pepper
Directions 
- Brown pork with a little oil for a few minutes,
- In another pan sauté garlic, onion, mushrooms and serrano peppers. Add the pork when onions look transparent.
- Pour in coconut milk, and bring to a boil and then stir
- Add in chili powder and cook until sauce thickens. Season with salt and pepper. Serve hot.
