Christmas 2009

 

This was my first white christmas in a winter wonderland. When I come to think of it, it is a childhood fantasy come true.

 

Though I miss my family in the Philippines this Christmas, I had a really great time with my new family here in Colorado. Though it’s freezing cold outside, it feels good inside. Love is truly everywhere. I enjoy being with them. They are absolutely loads of fun, and not to mention absolutely amazing in the kitchen. I’m glad I’m not on a diet now.

 

It has been a truly wonderful Christmas.

I sent presents to my family in Iloilo…

 

I had a note placed outside the packages that said “DO NOT OPEN UNTIL NOCHE BUENA”

 

Guess what. Of course it didn’t stay closed until Noche Buena!

 

But then, I kind of expected that to happen already. Not following instructions. It runs in the family.

My first attempt at Bicol Express was made of success!

 

I loved it. But then, I love anything with gata (coconut milk). My husband loved it too.

 

Here’s my version of the hot Pinoy favorite:

  • 1/2 kilo pork, cut into 1” cubes
  • 1 cup serrano or jalapeno peppers thinly cut (i think sili espada is the perfect choice but it’s not available here in Colorado)
  • 1 tbsp chili powder
  • 3 cloves of garlic minced
  • 1 onion, minced
  • 1 1/2 cup coconut milk
  • 1/2 cup shitake mushrooms thinly sliced
  • Salt and pepper

 

Directions

  1. Brown pork with a little oil for a few minutes,
  2. In another pan sauté garlic, onion, mushrooms and serrano peppers. Add the pork when onions look transparent.
  3. Pour in coconut milk, and bring to a boil and then stir
  4. Add in chili powder and cook until sauce thickens. Season with salt and pepper. Serve hot.

Had my first prenatal ultrasound today…

 

Doctor said my baby is bigger than he/she’s supposed to be for his/her age, but he said it’s within normal expectations.

 

He also said baby moves a lot. Why am I not surprised. (By this time Eli can’t stop talking and interrupting)

 

Then baby starts to hiccup… and I fell deeply in love.
